When you live in a van can be hard to stay healthy. It’s so easy to buy snacks and junk food because you cooking capacities may be limited. This short article gives you some ideas for cheap and healthy food which doesn’t require too much cooking or prep!
Pasta or Rice Salad

This is ideal when you can boil a lot of pasta or rice but can’t finish it all. You can store some in the fridge and then add ingredients to have your cold pasta or rice salad!
Ingredients:
- pasta or rice (to be cooked and then cooled down)
- fresh tomatoes
- cheese (mozzarella or any cheese you like)
You can season your pasta or rice with pesto to give extra flavour and you can add any ingredients you like.
Breakfast Burrito

This is such a great comfort food! It’s quick and easy to make and it requires just three ingredients:
- Your favourite soft wrap
- Your favourite cheese
- Eggs
You want to cook your scrambled eggs first. Put them aside and heat up a wrap in the same pan, add some cheese (camembert adds an extra flavour), add the eggs and wrap everything up. Squeeze it a little bit to toast it well and enjoy you delicious breakfast (or lunch)!
Falafel and Feta Salad

This is one of those recipes that happen by chance when you want to get rid of random leftovers in the fridge and then it turn into one of your favourite dishes!
Ingredients:
- Coleslaw or any greens yo like
- Cucumber
- Falafel
- Feta
- Fresh basil and bread crostini (if available)
We seasoned it with salt and olive oil (evoo), but you may like to have any other salad seasoning.
